A Springtime Brunch Menu

Spring is in full swing and lots of people are hosting meals for family and friends! Springtime brings flowers, rain clouds (or usually snow here in Denver), and fresh vegetables. After recovering from the winter holidays, most people are ready to host again to celebrate the new season. Here’s a crafted menu of tasty delights my family and I enjoy!

St. Germain Champagne Cocktail

For a change from the usual mimosa or bloody Mary, I love the unique flavor of elderflower liqueur and how it pairs nicely with the Champagne. Garnish with a lemon twist, some peach slices, or a couple raspberries for a festive touch!

Lavender Lemonade

A refreshing twist on the usual lemonade, adding lavender to your lemonade gives it a nice floral flavor. You don’t need much, but it’s definitely delicious all season long and into the hot summer months!

Prosciutto Asparagus Puff Pastry Bundles

These savory little bundles are a perfect way to start your meal! Fresh asparagus is in season paired with my favorite cheese, Gruyère. Using frozen pastry crust makes this recipe a snap to put together and looks very impressive to your guests!

Cheddar Pecan Scones

These crumbly scones are absolutely delicious! They pack a punch in flavor with a peppery bite and sweet crunch from the pecans. The sharp cheddar is a nice zing that’s perfect for brunch (or anytime of day!).

Dutch Baby with Fresh Berries

We make Dutch baby pancakes pretty regularly in our house. They’re perfect for a weekend brunch topped with mascarpone whipped cream, fresh or sautéed fruits (peaches or pears are my favorite), and some lemon curd (if aren’t up for making your own, Trader Joe’s makes the best store bought version!).

This is such a big hit in our house we usually end up doubling the recipe and making a second one. It makes for a great breakfast treat the next morning too. My kids love to watch it puff up in the oven!

Mixed Greens with Champagne Vinaigrette

A fresh, acidic vinaigrette tossed with some mixed greens is the perfect compliment to a sweet Dutch baby or savory egg dish. With a little extra effort, whisking together a homemade salad dressing will make it special for your guests. Some ideas for mix-ins: tomatoes, cucumbers, and a sprinkling of salty feta; or crunchy walnuts, green apples for tartness, and Parmesan.
